Culture is supposed to be shared and enjoyed, if they learned more about the author them people would realize how much this food means to her. Turn your frozen bag of dumplings into the star of this hearty Dumpling Noodle Soup, made with fresh green veggies and an easy homemade broth. Given the short proving period for the starter, we weren’t sure of the reason behind creating a starter first and then a dough, rather than plunging straight into a yeasted dough (as is the process in other bao recipes we have used). This is like a handbook for the modern home cook, with over 70 recipes exploring the traditional cooking techniques of our best-loved Asian dishes. Of course, much of this food takes time, but there is a special joy to be derived from this kind of kitchen project. Some of the dumpling and bun recipes in this chapter are char siu bao, Shengjian bao (mantou), Taiwanese peppery pork buns, sweet potato jiaozi, juicy Xinjiang lamb dumplings, crab XLB (soup dumplings), har gau, weeknight veggie gyoza, best Sichuan chilli oil wontons, and pork and prawn sui mai. My recipe takes advantage of springtime green vegetables, but it can be made with whatever is available in your fridge, and it's easily vegan if using egg free noodles.For these photos, I left the vegetables in fairly large pieces but you can chop them more finely if you wish. I find myself wishing that recipes to make fresh Soba and Udon noodles had been included too, as two of my personal favourites, but appreciate that the book is not intended to be an exhaustive collection.
